The sending store records the transfer; the receiving store confirms it. Both stocks are updated and gaps stay visible.

Yes. Each profile has its own access rights: a store manager sees their store, the owner sees the whole network.
Are figures available in real time?
Sales come in throughout the day. An offline iPad keeps selling and sends its receipts as soon as the network returns.
